Raw Fish - Here fishy, fishy, fishy...

Tzatziki Is Easy

Tzatziki Dip Greek Yoghurt
Tzatziki, or tsatsiki as it is spelt by some, is a Greek dish served with flat bread as an appetizer, or as a sauce for souvlaki and kebabs.
Traditionally made with sheep or goats milk yoghurt, it can also include cucumber, salt, garlic, olive oil, vinegar, dill, parsley and mint. There are a number of variations originating from Greece, Macedonia, Bulgaria, Turkey, Cyprus, Iraq and Iran.
In the following recipe and step by step pictures, I have made a basic version using a tub of Greek style yoghurt which is quite thick and eliminates the time consuming process of draining the yoghurt in a muslin cloth for hours.
Tzatziki ingredients cucumber garlic
Ingredients
½ continental cucumber
(Or 1 Lebanese cucumber)
Salt & Pepper
200g Greek style yoghurt
Method
grated cucumber in chux
Peel and deseed the cucumber.
Grate the flesh and tip it onto a clean kitchen cloth.
Twist the cloth so that the cucumber forms a tight bundle while squeezing the excess water out over the sink.
tzatziki seasoning
Tip the cucumber into a bowl and add an equal quantity of yoghurt.
Season it with salt and pepper.
Mix together and allow the tzatziki to stand for an hour.
Serve with flat bread or water crackers.
