Homemade Tartare Sauce Is Easy

Even though I love tartare sauce on fish I never buy it at the supermarket. I buy a jar of mayonnaise and make it at home. Any leftover sauce goes into a jar and in the fridge for next time.
All I need are gherkins, capers and mayonnaise, with a squeeze of lemon juice if I have any. A jar of gherkins lasts for ages in the fridge, as I dislike eating them whole. A jar of capers lasts for age too.
Just half fill an empty jar with your choice of mayonnaise.
Finely dice half a gherkin and roughly chop a tablespoon of capers.
Mix them together with the mayonnaise and add a squeeze of lemon juice.
Season with salt and pepper if required.
Serve with fried or grilled fish.
