Simple Brazilian Pitanga Recipe

The following is a simple recipe for a birthday cake using pitangas, a common South American fruit. Pitangas are also known as Surinam cherries and can be substituted for regular cherries in recipes.
Ingredients
250g (½ lb) Sponge cake
100g (4oz) Pitangas
75g (3oz) Icing sugar
1 tbsp Jam (any flavour)
150ml (5floz) Cream
Method
Cut a slit in the pitangas and squeeze the seeds out.
Place the pitanga flesh in a bowl, sprinkle with a little sugar and refrigerate.
Whip the cream with a little sugar and refrigerate.
Split the sponge cake with a serrated knife.
Drain of any excess juice from the pitangas.
Add a spoonful of jam to the sweetened fruit and stir it.
Spread the pitanga mix over the bottom piece of sponge cake.
Spread the whipped cream over the pitanga layer and top with the other piece of sponge.
Place the remaining icing sugar into a fine sieve and sprinkle over the top of the cake.
