Nimbin Natural Elbo Style Vegetarian Cheese
Nimbin, in the Northern Rivers district of New South Wales, is home to the Nimbin Mardi Grass and well known for alternative lifestyles and vegetarianism. Norco dairy co-operative in nearby Lismore recognised the nationwide demand for an alternative vegetarian cheese and named their product Nimbin Natural.

Nimbin Natural Elbo style cheese is a soft cheese with a smooth velvety texture and a mild flavour. Elbo is a Danish style cows' milk cheese, similar to Samsø, with a creamy yellow colour and irregular holes made by gas bubbles.

Nimbin Natural is made with vegetarian enzymes, Acidophilus cultures, reduced salt and fresh dairy milk from contented cows nourished on the rich pastures of the Northern Rivers.

The Norco Co-operative was established in 1895, and has grown from a regional dairy co-operative to a national force in manufacturing. Based in Lismore, Norco is now one of the largest dairy processors in NSW, producing milk, cheese and ice cream under its own label and on a contract basis for some of Australia’s leading brands.

Nimbin Natural Elbo style cheese is suitable for serving as is on cheese platters, in salads or on sandwiches, but it also melts well, making it ideal for pizzas and pastas, for my smoked cod with three cheese sauce or even lobster mornay.

Halloween pumpkin jack o lantern carving
Halloween began as an Irish, Celtic and Scottish tradition celebrating harvest time at the end of summer. During the eighth century the Catholic Church designated the first day of November as 'All Saints Day ('All Hallows') - a day of commemoration for those Saints that did not have a specific day of remembrance. The night before was known as 'All Hallows Eve' which, over time, became known as Halloween.

The traditional Halloween cake in Ireland is the barnbrack cake which is a fruit bread. Other traditional foods included colcannon, a meal of potato, kale and onion. Coins were wrapped in baking paper and placed in the food for children to find and keep
