Halloween pumpkin jack o lantern carving
Halloween began as an Irish, Celtic and Scottish tradition celebrating harvest time at the end of summer. During the eighth century the Catholic Church designated the first day of November as 'All Saints Day ('All Hallows') - a day of commemoration for those Saints that did not have a specific day of remembrance. The night before was known as 'All Hallows Eve' which, over time, became known as Halloween.

The traditional Halloween cake in Ireland is the barnbrack cake which is a fruit bread. Other traditional foods included colcannon, a meal of potato, kale and onion. Coins were wrapped in baking paper and placed in the food for children to find and keep.

Villagers in Ireland hoped that a lantern carved from a turnip in their window would keep wandering spirits away. When millions of Irish migrated to America there was not a great supply of turnips so pumpkins were used instead and the Jack-o-lantern was born.

Japanese teppanyaki barbeque chef leaping flames
Murasaki Japanese Restaurant in Broadbeach is much more than just sushi. It is a Japanese teppanyaki restaurant, with indoor and outdoor tables and counter seating, where the flash of leaping flames offers a warm welcome on chilly nights.

The food is cooked at the teppanyaki station with all the flair and showmanship of a magician, as the chef juggles the utensils and condiments, catching the salt shaker in his hat and creating a volcano from onion rings with flames shooting from the top

It has been a busy month for Greenmount Surf Club which recently celebrated 100 years of patrolling the beach. Formally known as the Tweed Heads and Coolangatta Surf Life Saving Club, its members have been saving lives since 1911. The 100th birthday celebration featured a march past of former members, the ‘Old boys’, and displays of faded photographs, memorabilia and rescue craft of a bygone era.

Greenmount beach also hosted the State Nippers Titles in March, with representatives from clubs as far afield as Maroochydore and Airlie Beach. Greenmount Beach Club, the commercial arm of the club, has acquired a new head chef and kitchen crew and an inspired new menu

Fried pickles recipe American appetizer USA
The United States is not widely renowned for fine food but several valid styles of cuisine have developed there. Cajun cookery was created by French Canadians expelled to Louisiana by the British. Creole (meaning mixture) was developed in the cultural melting pot of New Orleans, and Tex-Mex largely owes its inspiration to Spanish/Mexican traditions. In the following recipe with step by step pics I demonstrate a popular southern US dish, fried pickles.

Fried pickles are so popular they are even featured at annual fairs, and are frequently served in Australia at American themed restaurants such as Hooters. Fried pickles are usually made with cucumber dill pickles, but variations include pickled okra and pickled jalapeños

Hooters American barbeque glazed pork ribs
Hooters have long been established in the United States as themed restaurants and sports bars, and now they are in Australia, with stores in Parramatta in Sydney and Mermaid Beach on the Gold Coast, and a new outlet opening in Penrith in May. Generous portions of quality food, a party atmosphere and the world famous Hooters girls all combine to make a memorable occasion.

I was surprised by the quality of the food at Hooters. The menu features a half kilo or kilogram of marinated pork, beef or lamb ribs, tender aged steaks, grain fed beef burgers and Hooters famous buffalo chicken wings. Seafood such as wild caught tuna, salmon steaks and barbeque prawns are available as well as Mexican dishes including quesadillas, enchiladas and nachos. Mine truck roadside haul ore overbalance
I have often wondered what the miners eat in remote locations, so I took a chef job, working in various isolated mine sites across the country. It is a massive task to feed so many hungry men and women. The miners, administration, support staff and contractors generally live in demountable rooms called ‘dongas’ and eat breakfast, lunch and dinner in a gigantic central mess hall. The kitchens are vast, with huge walk in coolrooms and freezers, and a team of a dozen or so chefs, cooks and kitchen hands slaving away to prepare the meals.

The full buffet breakfast consists of toast, muffins and other breads which the workers cook for themselves, using a row of toasters in the mess. The patrons can also select from a range of cereals, fresh fruit, cold cuts and salads

Nestled in a little lane behind the Beach Hotel in Byron Bay, Fishmongers Café is like a breath of fresh sea air. Calamari and chips with tartare sauce or calamari and salad are available for $12.50. The thick cut calamari rings are tender and the chips are great. Soggy chips often let down a feed of seafood but ‘Mongers chunky hand cut chips are crunchy on the outside and fluffy in the middle.

Starbucks Coffee Creme Brulee Macchiato
I was pleasantly surprised when I first tried Starbucks. Their Crème Brulee Macchiato was the most luscious cup of coffee I have ever had. Admittedly, I am not a coffee aficionado but it was sweet and foamy and creamy, with delectable artwork on top. I also bought what I thought was a gingerbread man but it turned out to be honey bread. I loved my macchiato but I asked myself; ‘is it fair trade coffee?’

The Fair Trade Association of Australia and New Zealand says poverty is widespread amongst coffee, tea and cocoa growers around the world. Coffee companies in many countries exploit their workers, with long hours in primitive conditions, while paying them a pittance. Some use child labourers that are virtually slaves

Chocicious Chocolate Teddy Valentines Day Gift
What better way to win a heart on Valentines Day than with a gift of chocolate? It is said that the way to a mans heart is through his stomach, but I believe that is true of women too. Chocolates stimulating and aphrodisiac qualities have been legendary since the times of the Olmecs, Mayans and Aztecs.
Chocolate is derived from the seeds of the Cacao tree, (pronounced Ka-kow), native to Central and South America. The bitter tasting seeds are fermented, dried and roasted to produce cacao ‘nibs’. Cocoa (Ko-ko) powder is made by grinding, crushing and pressing the ‘nibs’ to remove the oil, or cocoa butter. Manufacturers add sugar, vanilla, milk and extra cocoa butter to make milk chocolate.
