Prawn And Avocado Salad Using Four Ingredients
December 22nd 2009 13:16
Prawn and avocado salad is a perfect cold entree to serve during Australia’s hot summer months. Quick Quiz Question: Which contains cholesterol, prawns, avocado or cocktail sauce? It is a common misconception that avocados contain cholesterol.
Cholesterol is only produced by animals and is found in meat, fish, eggs and dairy food. All vegetable matter, including vegetable oil, is cholesterol free. Prawns contain cholesterol, as does the eggs that made the mayonnaise for the cocktail sauce.
Avocados are in peak season now and are better quality and comparatively inexpensive.
Ingredients
½ Avocado
6 Cooked peeled prawn tails
30ml Cocktail sauce
1 Lemon wedge
Method
Halve, deseed and skin the avocado.
Arrange on a garnished plate with the prawns and lemon wedge.
Spoon the cocktail sauce into the avocado or serve on the side.
I recommend serving this dish with a Brown Brothers 2008 Pinot Grigio.
