Grilled Lemon Pepper Flathead With Greek Salad

In my last post I discussed what I consider to be the most underrated fish, flathead. In the following recipe and step by step pictures I demonstrate a tasty Greek inspired fish dish that is low in carbohydrates as it isn’t deep fried. I have used dusky flathead which I caught off South Stradbroke Island.
Ingredients
4 Small Flathead fillets
50g Flour
30g Lemon pepper
Pinch Sea salt
20g Butter or Olive oil spray
1 sprig Lemon thyme
Method
Combine the flour, salt, chopped thyme and lemon pepper on a plate.
Coat the fish fillets in the seasoning mixture.
Line a grill tray with foil and spray with oil and preheat the grill.
Place the fish fillets on the tray and spray with oil or top with a knob of butter.
Grill for about 5 minutes for small fillets.
Serve Lemon Pepper Flathead with Greek Salad and Dolmades.
