Chocolate Chip Oat Cakes Recipe

The following recipe is based on the recipe for Anzac biscuits, which are based on a traditional Scottish oat cake. I had some dough leftover from Anzac biscuits and a block of dark chocolate. I chopped the chocolate and mixed it through the dough, and Bob’s your uncle!
Ingredients
200g (7oz) Plain flour
150g (5oz) Rolled oats
150g (5oz) Desiccated coconut
150g (5oz) Brown sugar
120g (4oz) Butter
90ml (3oz) Treacle
1 tsp Bicarbonate soda
30ml (1oz) Hot water
55g (2oz) Dark chocolate
Method
Combine the flour, oats, coconut and sugar in a bowl.
Melt the butter and add the treacle or golden syrup.
Dissolve the bicarbonate soda in the water and add it to the butter.
Make a bay in the dry ingredients and add the liquids.
Mix into a moist dough.
Scoop a tablespoon of the dough into a flattened ball.
Dab one side in the chopped chocolate
Fold the dough so that the chocolate is partially encased, and flatten it out again.
Repeat the process, placing biscuits onto a greased tray.
Bake at 170°c for about 15 minutes.
Serve with tea.
