Chinese Coca Cola Chicken – Step By Step Recipe

A Chinese chef I once worked with noticed that I enjoyed Coca Cola. At his suggestion I gave him a can and he showed me how to make Chinese Coca Cola chicken. It is made with chicken wings blanched in Coca Cola, seasoned, coated and fried. Topped with a soy sauce and cola reduction which is a lot like Kecap Manis, it is both sweet and savoury, typical of the eastern Chinese cuisine of Shanghai. The combination of flavours is surprisingly good, as the sweetness of the sauce counterbalances the spicy chili chicken wings.
Ingredients
500g Chicken wings
375ml Coca Cola
100ml Soy Sauce
½ tsp Crushed garlic
½ tsp Crushed ginger
3 Pinches Chinese five spice
3 Pinches Chili Powder
Salt and Pepper
100g Corn flour
1L Frying oil
Method
Part One
Pour two thirds of the Coke and two thirds of the soy sauce into a pot.
Add the garlic and ginger, a pinch of five spice and chili powder and a pinch of salt and pepper.
Cut the chicken wings into sections and add them to the cold pot.
Bring the liquid to the boil, then simmer it for 12 minutes.
Drain the cooked wings and allow them to cool slightly, reserving the liquid for later use.
Part Two
To make the sauce, skim the chicken fat off the top of the liquid.
Without disturbing the sediment, return some of the cooking liquid to the pot.
Add the remaining Coke and soy sauce to the pot and simmer gently.
Season with salt and pepper and a pinch of five spice and chili powder.
The sauce can be reduced until it has a syrup like consistency, or to speed things up and produce more volume, simply thicken the liquid, off the stove, with a slurry of corn flour and water.
Part Three
Season the corn flour with salt and pepper and a pinch of five spice and chili powder.
While the chicken is still warm, coat it in the seasoned corn flour.
Heat the oil to 175° and fry the chicken wings until the coating is crisp and brown.
Remove the fried chicken a drain it on a paper towel.
Serve Chinese Coca Cola Chicken drizzled with the soy and cola sauce, accompanied by fried rice.

my girlfriend snapped it, and we fought over the remaining pieces.
I made a change, though... before frying, I coated the wings in beaten egg, then coated with bread crumbs. That's a nice crunchy exterior...

I use it in some of the my dipping sauces. I like how the sweet flavour combines nicely with the sauces' smooth texture.
I'll have to try this recipe.
