Cheap And Easy Chicken Stock

In my previous post I demonstrated how to dismember a large chicken for more economical cuts of poultry.
The remaining carcass is ideal for chicken stock which can be frozen in suitable volumes and thawed as required.
It is cheaper and more sustainable than buying stock from the supermarket and tastes better than stock cubes.
All you need are some chicken bones, a piece of carrot, half an onion and a stick of celery with some peppercorns and a bayleaf if you have them.
Method
Put all the ingredients into a large pot and add two or three litres of cold water.
Bring it to the boil then reduce to a simmer for about an hour.
Strain the bones out and feed them to the dog. Cooked chicken bones are okay for dogs, it is raw chicken bones that shatter into sharp shards. Try cutting one of each with a heavy knife. Raw bones shatter.
Separate the stock into takeaway containers and allow to cool before freezing.
