Blueberry Waffles – Breakfast Or Dessert?

Blueberry Waffles Belgian Waffles English Waffles
The modern waffle has its origins in the light thin crisp cakes baked between wafer-irons during the Middle Ages. The oldest known reference to making waffles comes from a 14th century English cookbook and they were quite different from modern day waffles. There are many regional variations of waffles including English waffles, Belgian waffles, Dutch waffles and American waffles, but are they a breakfast or a dessert?
The majority of waffle dishes I have seen are sweet and usually include a fruit topping, however there are a few savoury waffle dishes, including cheese waffles, spinach waffles and bacon waffles. Waffles are easy to make in an electric waffle iron and recipe variations abound.
Belgian Blueberry Waffle Recipe Ingredients

Waffle Ingredients
250g Flour
1 pinch Salt
20g Baking powder
40g Sugar
2 eggs
250ml Milk
60g Melted butter
1 teaspoon vanilla extract

Topping Ingredients
½ punnet Blueberries
1tsp Sugar
½ tsp Vanilla extract
200ml Ice cream
Breville electric waffle iron belgian waffles

Method
Mix together flour, salt, baking powder and sugar.
In a separate bowl, beat the eggs, then stir in the milk, butter and vanilla.
Pour the milk mixture into the flour mixture and beat until blended.
Ladle the batter into a preheated waffle iron.
Cook the waffles until golden and crisp.

Mash some blueberries with a fork.
Mash half the ice cream into the blueberries and refreeze.
Serve the hot waffles with a scoop of plain vanilla ice cream topped with the blueberry crush.
